Blueberry squares

These blueberry squares are wonderfully moist and delicious. A quick traybake made with fresh blueberries, they are soft, fragrant and delightfully light – perfect with a cup of tea :). Thanks to the addition of oats, the cake stays fresh for longer.

Ingredients for the blueberry squares:

All ingredients should be at room temperature.

In a mixing bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Sift the flour and baking powder directly into the mixture. Add the milk and fold together with a spatula or whisk, mixing only until just combined. Add the oats, vanilla and cinnamon and mix briefly. Finally, add the blueberries tossed in flour and fold in gently.

Line the base of a 23 cm square cake tin with baking paper. Transfer the batter to the tin and smooth the surface. Sprinkle the brown sugar evenly over the top.

Bake the blueberry squares at 170°C for approximately 45 minutes, or longer if necessary, until golden and a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool. You can drizzle with icing if desired.

For the icing:

Place the icing sugar and milk in a small bowl and mix with the back of a spoon until smooth.
