Polish yoghurt pancakes (polish racuchy)

Excellent Polish pancakes (racuchy) made with yoghurt. Probably the fastest dessert in the world! You don’t even need a mixer. They’re even more delicious sprinkled with icing sugar. You can also add slices of apple to the batter. Make sure to save this recipe to your favourites!

Place the yoghurt and eggs in a bowl and whisk until combined. Sift the plain flour and baking soda directly into the bowl and whisk until smooth. The batter should be relatively thick – if necessary, add another tablespoon of yoghurt.

Heat a little oil in a non-stick frying pan. Spoon portions of the batter into the pan and fry on both sides until golden brown. Repeat with the remaining batter, adding more oil as needed. Transfer to kitchen paper to absorb any excess oil. Dust with icing sugar and serve.
