It\u2019s also perfect for a special occasion!<\/em><\/p>\n<\/blockquote>\n<p><u>Ingredients for the crust:<\/u><\/p>\n<ul>\n<li>2 packs of cocoa Petit Beurre biscuits<\/li>\n<\/ul>\n<p><u>Ingredients for the cheesecake:<\/u><\/p>\n<ul>\n<li>750 g full-fat or semi-skimmed curd cheese, ground three times<\/li>\n<li>250 ml whipping cream<\/li>\n<li>2 large eggs<\/li>\n<li>1\u00bd Tbsp custard powder<\/li>\n<li>1\u00bc cups caster sugar<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">Place all the ingredients in a large mixing bowl and beat until smooth and combined.<\/p>\n<p><u>Ingredients for the blueberry sauce:<\/u><\/p>\n<ul>\n<li>220 g blueberries, fresh or frozen<\/li>\n<li>70 g sugar<\/li>\n<li>1 tso potato starch<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Combine the blueberries and sugar in a small saucepan. Stir, then bring to a gentle simmer over medium heat and cook for about 5 minutes. Mix 1 tsp potato starch with 1 tbsp cold water, add to the saucepan, and stir until the sauce thickens slightly. Set aside to cool completely before using.<\/p>\n<p style=\"text-align: justify;\">Line a 33 \u00d7 23 cm baking pan with baking paper. Arrange the cocoa biscuits over the base of the pan, placing them side by side. Pour the cheesecake batter over the prepared biscuit crust. Spoon dollops of the blueberry sauce over the cheesecake and gently swirl through with a skewer.<\/p>\n<p style=\"text-align: justify;\">Bake at 160\u00b0C for 45\u201350 minutes, or until set in the centre. Extend the baking time slightly if necessary.
