It\u2019s perfect for Christmas, but just as lovely on an ordinary winter afternoon when you want something warming and comforting.<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for the gingerbread:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: justify;\">125 g butter<\/li>\n<li style=\"text-align: justify;\">80 g light soft brown sugar<\/li>\n<li style=\"text-align: justify;\">180 g honey<\/li>\n<li style=\"text-align: justify;\">180 g molasses<\/li>\n<li style=\"text-align: justify;\">250 ml milk<\/li>\n<li style=\"text-align: justify;\">1 large egg<\/li>\n<li style=\"text-align: justify;\">375 g plain flour<\/li>\n<li style=\"text-align: justify;\">1\u00bd tsp bicarbonate of soda<\/li>\n<li style=\"text-align: justify;\">2 tsp ground cinnamon<\/li>\n<li style=\"text-align: justify;\">2 tsp ground ginger<\/li>\n<li style=\"text-align: justify;\">2 tsp mixed spice<\/li>\n<li>a pinch of salt<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">In a saucepan, combine the butter, sugar, honey, molasses and milk. Stir and heat gently until melted and combined. Remove from the heat and leave to cool slightly &#8211; the mixture may remain lukewarm. In a large bowl, whisk the egg, then add the lukewarm honey-butter mixture. Whisk just until combined. Sift the flour, bicarbonate of soda and spices directly into the bowl, add the salt, and whisk again only until combined &#8211; do not overmix.<\/p>\n<p style=\"text-align: justify;\">Line a 23 \u00d7 33 cm tin with baking parchment. Pour in the batter and level the surface.<\/p>\n<p style=\"text-align: justify;\">Bake at 170\u00b0C for about 40\u201345 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool completely.<\/p>\n<p style=\"text-align: justify;\">Spread the cream cheese frosting over the top (recipe below) and smooth with a spatula. Decorate as desired.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for philadelphia cream cheese frosting:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>300 g Philadelphia cream cheese<\/li>\n<li>90 g butter<\/li>\n<li>40 g icing sugar, sifted<\/li>\n<li>85 g runny honey<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">Place the butter and icing sugar in the bowl of a mixer and beat until pale and fluffy. Add the honey and beat again. Gradually add the cream cheese in three batches, beating continuously until smooth. Taste and adjust sweetness if necessary.
