They\u2019re absolutely delicious! Friends have even nicknamed them \u201cDubai brownies\u201d ;). To make pistachio brownies, in addition to the usual brownie ingredients, you\u2019ll need 100% pistachio paste (with or without added sugar) and chopped pistachios. I don\u2019t recommend using pistachio spread here \u2013 although tasty and sweet, with a low pistachio content (max 50%) it will be overpowered by the chocolate flavour.<\/em><\/p>\n<\/blockquote>\n<p><span style=\"text-decoration: underline;\">Ingredients for the pistachio brownies:<\/span><\/p>\n<ul>\n<li>180 g butter<\/li>\n<li>100 g dark chocolate (70%), chopped<\/li>\n<li>150 g dark chocolate (50%), chopped<\/li>\n<li>3 large eggs<\/li>\n<li>2 tsp vanilla extract<\/li>\n<li>250 g caster sugar<\/li>\n<li>100 g plain flour<\/li>\n<li>\u00bd tsp baking powder<\/li>\n<li>a pinch of salt<\/li>\n<li>250 g pistachio paste (sweetened*)<\/li>\n<li>\u00bd cup chopped unsalted pistachios<\/li>\n<\/ul>\n<p>All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">Melt the butter in a saucepan, then remove from the heat. Add the chopped dark chocolate to the hot butter and set aside for 2 minutes. Stir until smooth and glossy. Leave to cool (or until just warm, but not hot) \u2013 it should remain pourable.<\/p>\n<p style=\"text-align: justify;\">In a bowl, lightly whisk the eggs with a balloon whisk (do not beat). Add the vanilla extract and sugar, and whisk for a while until well combined. Stir in the cooled chocolate mixture. Sift the flour and baking powder directly into the chocolate mixture, add the salt, and mix only until just combined.<\/p>\n<p style=\"text-align: justify;\">Pour the batter into a 23 cm square tin, buttered and lined with baking parchment. Spoon small amounts of pistachio paste over the top and swirl gently with the tip of a knife to create a marbled effect. Sprinkle with chopped pistachios.<\/p>\n<p style=\"text-align: justify;\">Bake at 160\u00b0C (fan) or 180\u00b0C (conventional) for 30\u201333 minutes. The brownie will rise slightly and may crack around the edges or wrinkle on top. A skewer inserted into the centre may come out moist, but there should be no raw batter on it. Brownies are not usually tested with a skewer, as it\u2019s not entirely reliable.<\/p>\n<p style=\"text-align: justify;\">Leave to cool completely, then cut into squares.<\/p>\n<p style=\"text-align: justify;\">*Pistachio paste (pistachio butter) is made from 100% ground pistachios with no added ingredients. It has the consistency of natural peanut butter and an intense pistachio aroma.
