Of course, you can swap the nuts for others, but in this version \u2013 with pistachios and cranberries \u2013 they feel especially festive. The cookies themselves are made from simple, easily available ingredients, and you may know them as \u201cRussian Tea Cakes\u201d or \u201cMexican Wedding Cookies\u201d. Pistachio and cranberry cookies make wonderful gifts and taste delicious with a cup of hot tea or coffee, as well as with a glass of milk.<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt;\">Makes 20 cookies.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for pistachio and cranberry cookies:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>115 g butter<\/li>\n<li>40 g icing sugar<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>a pinch of salt<\/li>\n<li>125 g plain flour<\/li>\n<li>20 g potato starch<\/li>\n<li>60 g pistachios, shelled and unsalted, finely chopped<\/li>\n<li>60 g dried cranberries, chopped<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Additionally:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>icing sugar, for coating<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">Place the butter, icing sugar and vanilla extract in the bowl of a mixer. Beat until light and fluffy. Add the salt, plain flour and potato starch, and mix thoroughly until combined. Add the pistachios and cranberries and mix again. Shape the dough into balls the size of a walnut and place them on a baking tray lined with baking parchment.<\/p>\n<p style=\"text-align: justify;\">Bake at 175\u00b0C for about 22\u201325 minutes, or until lightly golden.
