Yesterday, our parents arrived for a three-week visit \u2013 yippee! My mum is a huge fan of chocolate-covered prunes, so I made these especially for her arrival. These chocolate-covered prunes with marzipan are absolutely incredible \u2013 even better than shop-bought versions and certainly more economical to make at home. Although the weather was very warm and the chocolate took a while to set, a quick chill in the fridge solved the problem. Mmm… the best homemade chocolates in the world! Highly recommended!<\/em><\/p>\n<\/blockquote>\n

Makes 20 pieces.<\/span><\/p>\n

Ingredients for chocolate-covered prunes with marzipan:<\/span><\/p>\n

• 20 soft Californian prunes<\/li>\n
• \u2153 cup rum or brandy<\/li>\n
• 80 g marzipan<\/li>\n
• 130 g good-quality dark chocolate<\/li>\n<\/ul>\n

  The evening before, place the prunes in a bowl and pour over the alcohol. Leave overnight to soak.<\/p>\n

  The next day, shape the marzipan into small oval pieces resembling large plum stones and insert one into the centre of each prune.<\/p>\n

  Melt the chocolate in a heatproof bowl set over a pan of gently simmering water. Dip each prune into the melted chocolate, coating it completely. (It helps to skewer each prune with a cocktail stick or bamboo skewer while dipping.) Place the coated prunes onto baking parchment and leave until the chocolate has fully set.<\/p>\n
