Highly recommended!<\/em><\/p>\n<\/blockquote>\n<p><span style=\"font-size: 10pt;\">Makes about 25 Linzer cookies (sandwiched).<\/span><\/p>\n<p><span style=\"text-decoration: underline;\">Ingredients for Linzer cookies:<\/span><\/p>\n<ul>\n<li>170 g butter, cold and diced<\/li>\n<li>\u00be cup icing sugar<\/li>\n<li>finely grated zest of 1 lemon<\/li>\n<li>finely grated zest of 2 oranges<\/li>\n<li>3 egg yolks (from large eggs)<\/li>\n<li>1\u00bd cups ground almonds (or toasted ground hazelnuts or pecans)<\/li>\n<li>1\u00bc cups plain flour<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>2 teaspoons ground cinnamon<\/li>\n<li>\u00bd teaspoon grated nutmeg<\/li>\n<li>a pinch of salt<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">Additionally:<\/span><\/p>\n<ul>\n<li>raspberry jam, for filling<\/li>\n<li>icing sugar, for dusting<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Quickly combine all the cookie ingredients to form a dough \u2013 either by mixing with a stand mixer fitted with a pastry attachment, using a food processor, or kneading briefly by hand. Form the dough into a ball, flatten slightly, wrap in cling film and chill in the refrigerator for 1 hour.<\/p>\n<p style=\"text-align: justify;\">After chilling, roll out the dough on a lightly floured surface to about 2\u20133 mm thickness. Cut out cookies about 5 cm in diameter \u2013 half with a small cut-out centre in the centre. Place the cookies on a baking tray lined with baking paper, leaving a little space between them (they keep their shape during baking). Chill the tray with the cookies in the refrigerator for 30 minutes before baking. Gather the remaining dough scraps, knead briefly, roll out again and cut more cookies until all the dough is used.<\/p>\n<p style=\"text-align: justify;\">Bake the Linzer cookies at 180\u00b0C for about 12\u201315 minutes, or until lightly golden. Remove from the oven and allow to cool on a wire rack.<\/p>\n<p style=\"text-align: justify;\">Once cooled, spread raspberry jam on the base cookies and top with the cookies with cut-out centre.
