All ingredients should be at room temperature.<\/p>\n

In a large bowl, combine the egg, sugar, kefir or buttermilk, oil and vanilla extract. Mix with a balloon whisk until combined. Sift the plain flour, baking powder and bicarbonate of soda directly into the bowl. Mix with the whisk only until the ingredients are combined, no longer. Add the strawberries coated in potato starch and stir briefly.<\/p>\n

Grease a small loaf tin measuring 21 x 11 cm and line it with baking parchment. Transfer the batter into the tin and level the surface.<\/p>\n

Bake at 170\u00baC for approximately 55 \u2013 60 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven, leave to cool in the tin, then transfer to a serving plate. \u00a0Drizzle with lemon icing and decorate as desired.<\/p>\n

Ingredients for the lemon icing:<\/span><\/p>\n

• 1 cup icing sugar<\/li>\n
• 3 tablespoons lemon juice<\/li>\n<\/ul>\n

  Place all the ingredients into a small bowl and mix with the back of a spoon. If the icing is too thin, add more icing sugar; if it is too thick, add more lemon juice.<\/p>\n
