A delightful strawberry dessert that&#8217;s perfect for summer!<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for the base:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>chocolate Petit Beurre biscuits (2 packets)<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Line a 20 x 30 cm baking tin with baking paper. Arrange the biscuits in a single layer over the base of the tin, trimming them if necessary to fit.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for the cheesecake filling:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>750 g full-fat or semi-fat curd cheese, triple-ground<\/li>\n<li>250 ml double cream<\/li>\n<li>2 large eggs<\/li>\n<li>1\u00bd tablespoons potato starch<\/li>\n<li>1\u00bc cups caster sugar<\/li>\n<li>1 teaspoon vanilla bean paste, vanilla extract or 1 packet vanillin sugar<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">Place all the filling ingredients into the bowl of a stand mixer. Mix only until combined, or whisk by hand. Do not overmix, as incorporating too much air may cause the cheesecake to rise excessively and then sink during cooling. The finished cheesecake should have a smooth, level surface. Carefully pour the cheesecake mixture over the biscuit base.<\/p>\n<p style=\"text-align: justify;\">Bake at 160\u00b0C for approximately 45\u201350 minutes, preferably without fan assistance. The surface should be fully set and no longer wobble when lightly touched with a skewer. If necessary, extend the baking time slightly. Remove from the oven and leave to cool completely.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for the roasted strawberry sauce:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>500 g strawberries, hulled and halved<\/li>\n<li>1 tablespoon balsamic vinegar<\/li>\n<li>4 tablespoons soft brown sugar<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">In a wide ovenproof dish, combine the strawberries, balsamic vinegar and brown sugar.<\/p>\n<p style=\"text-align: justify;\">Bake at 170\u00b0C for approximately 35\u201340 minutes (a few minutes longer if using frozen strawberries), uncovered. Remove from the oven and leave to cool. Blend until smooth to create a strawberry pur\u00e9e. Allow to cool completely.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">To finish:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>10 strawberries<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Spread the roasted strawberry sauce evenly over the cooled cheesecake. Leave until the sauce thickens slightly.
