How often do you buy these kinds of cookies? If the answer is \u201ca bit too often\u201d, it\u2019s definitely worth making them at home :). These jam cookies are absolutely delicious \u2013 buttery, crumbly and very easy to make. It\u2019s really just a matter of mixing a few ingredients together. The dough is piped onto the baking tray, which can take a bit of effort; if you have a cookie press, now is the perfect time to use it \u2013 it makes the process much easier! Both children and adults love these classic cookies.<\/em><\/p>\n<\/blockquote>\n

Makes 2 baking trays.<\/span><\/p>\n

Ingredients for jam cookies:<\/span><\/p>\n

• 220 g butter<\/li>\n
• 100 g icing sugar<\/li>\n
• 2 egg yolks<\/li>\n
• 1 teaspoon vanilla extract<\/li>\n
• 300 g plain flour<\/li>\n
• 50 g potato starch (or cornflour)<\/li>\n
• a pinch of salt<\/li>\n
• a few tablespoons thick jam (e.g. cherry)<\/li>\n<\/ul>\n

  All ingredients should be at room temperature.<\/p>\n

  Cream the butter and icing sugar until pale and fluffy. Add the egg yolks and vanilla extract, mixing until well combined. Add the flour, starch and salt, and mix until a smooth dough forms.<\/p>\n

  Transfer the dough into a piping bag fitted with a large star nozzle (e.g. Wilton 1M).<\/p>\n

  Line two baking trays with baking parchment. Pipe the cookies into small rounds, leaving a little space between them (they spread only slightly). Add a small dollop of jam in the centre of each.<\/p>\n

  Bake at 180\u00b0C for about 12 minutes, or until the edges are lightly golden. Remove from the oven and cool on a wire rack.<\/p>\n
