Aebleskiver are traditional Danish pancakes, most often made during the festive season, although they are enjoyed all year round. They are cooked in a special pan with round wells and resemble little doughnuts, although they are not deep-fried. Light and fluffy, they are best served dusted with icing sugar and accompanied by fresh fruit or fruit sauce. It is also popular to add fruit or Nutella to the centre of the pancakes before turning them over. There are many different recipes for aebleskiver. Below is a basic version, although buttermilk-based recipes and versions made with yeast are also very popular.<\/em><\/p>\n<\/blockquote>\n

To make aebleskiver, you will need a special pan with hemispherical wells.<\/span><\/p>\n

Ingredients for aebleskiver:<\/span><\/p>\n

• 250 ml milk<\/li>\n
• 1 large egg<\/li>\n
• 30 g butter, melted<\/li>\n
• 1 tsp vanilla extract<\/li>\n
• 3 tbsp caster sugar<\/li>\n
• 190 g plain flour<\/li>\n
• 2\u00bd tsp baking powder<\/li>\n
• \u00bc tsp ground cardamom<\/li>\n
• a pinch of salt<\/li>\n<\/ul>\n

  All the ingredients should be at room temperature.<\/p>\n

  Place the milk, egg, melted butter, vanilla and sugar in a bowl. Whisk until combined. Sift the flour, baking powder and cardamom directly into the mixture, add the salt and whisk again until smooth.<\/p>\n

  Heat the aebleskiver pan. Add a tiny amount of butter to each well \u2013 literally about the tip of a knife \u2013 and allow it to melt. Fill each well with batter to about \u00be full. Cook the pancakes, turning them over with a wooden skewer, until golden brown and cooked through on all sides.<\/p>\n

  Serve hot, dusted with icing sugar and accompanied by fresh fruit.<\/p>\n
