Delicious cookies with a rich buttery flavour and a hint of orange – perfect for afternoon tea. Lady Grey is my favourite tea, but you can easily replace it with any Earl Grey if you prefer. The easiest way to grind the tea leaves is in a coffee grinder. This recipe contains no eggs, so the quantities can be easily halved or\u2026 doubled ;). Highly recommended!<\/em><\/p>\n<\/blockquote>\n

Makes 8 dozen cookies.<\/p>\n

Ingredients for the Lady Grey butter cookies:<\/u><\/p>\n

• 2 cups plain\u00a0flour<\/li>\n
• 2 tbsp ground Lady Grey or Earl Grey tea leaves (from 4 tea bags)<\/li>\n
• \u00bd tsp salt<\/li>\n
• 230 g butter, at room temperature<\/li>\n
• \u00bd cup of icing sugar<\/li>\n
• finely grated zest of 1 orange<\/li>\n<\/ul>\n

  In a mixing bowl, beat the butter, icing sugar, and salt until light and fluffy. Mix the flour with the ground tea leaves. Add to the butter mixture along with the orange zest and mix until combined. Divide the dough in half and roll each portion into a log about 3 cm in diameter. Wrap tightly in baking paper and place in the freezer for 45-60 minutes.<\/p>\n

  Once chilled, slice the logs into rounds approximately 4 mm thick using a sharp knife. Arrange on a baking tray lined with baking paper, leaving about 3 cm between each cookie.<\/p>\n

  Bake at 180\u00b0C for 12\u201315 minutes, or until the edges are lightly golden. Remove from the oven and transfer to a wire rack to cool completely.<\/p>\n
