Truffles with a surprising green centre, made with Japanese matcha tea. Matcha, a finely ground green tea powder, is very concentrated and gives desserts a distinctive aroma – just one teaspoon is enough to flavour the truffles beautifully. Use your favourite chocolate for coating.<\/em><\/p>\n<\/blockquote>\n

Makes 10 truffles.<\/span><\/p>\n

Ingredients for the matcha green tea truffles:<\/u><\/p>\n

• 200 g white chocolate, chopped<\/li>\n
• 60 ml whipping cream<\/li>\n
• 1 tsp matcha green tea, sifted<\/li>\n
• 80 g milk or dark chocolate, for coating<\/li>\n<\/ul>\n

  Gently heat the cream in a small saucepan. Add the matcha and whisk until fully dissolved. Remove from the heat, add the chopped white chocolate, and stir until melted and smooth. (Alternatively, melt the chocolate over a bain-marie and combine with the matcha-infused cream.) Refrigerate until firm.<\/p>\n

  After a few hours, or preferably the next day, shape the mixture into truffles the size of small walnuts. Dip them in melted milk or dark chocolate and place on baking paper. Once the coating has set, lightly dust with matcha.<\/p>\n
