Ingredients for the honey-roasted apricots:<\/span><\/p>\n
\n
- 5 apricots<\/li>\n
- 4 tablespoons flaked almonds<\/li>\n
- 4 tablespoons runny honey<\/li>\n
- a pinch of ground ginger or ground cinnamon<\/li>\n<\/ul>\n
To serve:<\/span><\/p>\n

- vanilla ice cream<\/li>\n<\/ul>\n
Halve the apricots and remove the stones.<\/p>\n
Lightly grease the base of an ovenproof dish with butter. Arrange the apricot halves cut side up. Sprinkle over the flaked almonds, drizzle generously with the honey and dust lightly with the ginger or cinnamon.<\/p>\n
Bake at 200\u00b0C for 12\u201315 minutes, until the apricots are tender but still holding their shape and the almonds are lightly toasted. Serve warm, preferably with scoops of vanilla ice cream.<\/p>\n
