Not only for rhubarb lovers!<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt;\">Makes 10\u201312 muffins.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for rhubarb muffins:<\/span><\/p>\n<ul>\n<li style=\"text-align: justify;\">250 ml buttermilk<\/li>\n<li style=\"text-align: justify;\">\u2153 cup sunflower or rapeseed oil<\/li>\n<li style=\"text-align: justify;\">1 cup light muscovado sugar<\/li>\n<li style=\"text-align: justify;\">1 large egg<\/li>\n<li style=\"text-align: justify;\">1 teaspoon vanilla extract<\/li>\n<li style=\"text-align: justify;\">2 cups plain flour<\/li>\n<li style=\"text-align: justify;\">2 teaspoons baking powder<\/li>\n<li style=\"text-align: justify;\">\u00be teaspoon bicarbonate of soda<\/li>\n<li style=\"text-align: justify;\">170 g rhubarb, diced (do not peel)<\/li>\n<li style=\"text-align: justify;\">\u00bd cup chopped walnuts<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">For the topping:<\/span><\/p>\n<ul>\n<li>2 tablespoons light muscovado or demerara sugar<\/li>\n<li>1 teaspoon ground cinnamon<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">In a large bowl, whisk together the buttermilk, oil, sugar, egg and vanilla extract until combined. Sift the dry ingredients directly into the mixture \u2013 the flour, baking powder and bicarbonate of soda \u2013 and whisk briefly, just until combined. Do not overmix. Add the diced rhubarb and chopped walnuts and gently mix.<\/p>\n<p style=\"text-align: justify;\">Line a standard muffin tin with paper cases. Spoon the batter into the cases, filling them about \u00be full. Sprinkle the tops with the sugar mixed with cinnamon.<\/p>\n<p style=\"text-align: justify;\">Bake at 175\u00b0C for about 25 minutes, or until a skewer inserted into the centre comes out clean.
