Today\u2019s recipe is a lighter version of oat cookies \u2013 wholemeal oat cookies with prunes. They\u2019re made without butter, using just two (!) tablespoons of oil, with wholemeal flour (you can also use spelt) and a reduced amount of sugar. Part of the sugar is replaced with maple syrup (or honey), which helps the cookies spread slightly on the tray. These cookies aren\u2019t crunchy \u2013 they\u2019re soft and tender. Crumbled, they make a great addition to natural yoghurt. Alongside the oats, you\u2019ll find plenty of prunes \u2013 they\u2019re genuinely good for digestion. Highly recommended!<\/em><\/p>\n<\/blockquote>\n<p><span style=\"font-size: 10pt;\">Makes about 20 cookies.<\/span><\/p>\n<p><span style=\"text-decoration: underline;\">Ingredients for the wholemeal oat cookies with prunes:<\/span><\/p>\n<ul>\n<li>1 large egg<\/li>\n<li>\u2153 cup light brown sugar<\/li>\n<li>4 tablespoons maple syrup<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>2 tablespoons rapeseed oil<\/li>\n<li>a pinch of salt<\/li>\n<li>\u00bd cup wholemeal plain flour<\/li>\n<li>\u00bd teaspoon bicarbonate of soda<\/li>\n<li>1 cup rolled oats<\/li>\n<li>1 cup prunes, chopped<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">In a bowl, whisk together the egg, sugar, salt, maple syrup, vanilla extract and oil until well combined. Add the flour, bicarbonate of soda, oats and chopped prunes. Mix with a spoon until combined (you can leave the mixture to rest briefly so the oats soften).<\/p>\n<p style=\"text-align: justify;\">Shape the dough into walnut-sized balls (the dough is quite sticky, so it\u2019s best to use slightly damp hands). Alternatively, spoon portions onto the tray. Place on a baking tray lined with baking parchment and gently flatten with your hand.<\/p>\n<p style=\"text-align: justify;\">Bake at 180\u00b0C for about 10\u201312 minutes, until lightly golden.
