I absolutely love this dessert\u2014be sure to try it while rhubarb is still in season!<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for the rhubarb pudding:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>600 g rhubarb, cut into pieces<\/li>\n<li>\u2153 cup light brown sugar<\/li>\n<li>2 tablespoons water<\/li>\n<li>100 g butter<\/li>\n<li>80 g caster sugar<\/li>\n<li>2 large eggs<\/li>\n<li>175 g plain flour<\/li>\n<li>1\u00bd teaspoons baking powder<\/li>\n<li>100 ml milk<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">Prepare a ceramic baking dish measuring approximately 17 \u00d7 28 cm. Arrange the rhubarb evenly over the base of the dish. Sprinkle with the brown sugar and drizzle with the water.<\/p>\n<p style=\"text-align: justify;\">Place the butter and caster sugar into the bowl of a stand mixer and beat until pale and fluffy. Add the eggs one at a time, beating thoroughly after each addition until fully incorporated. Sift the flour and baking powder directly over the mixture, add the milk and gently fold together with a spatula until just combined. Spread the batter evenly over the rhubarb and smooth the surface.<\/p>\n<p style=\"text-align: justify;\">Bake at 180\u00b0C for approximately 35\u201340 minutes, or until a skewer inserted into the sponge comes out clean. Remove from the oven and allow to cool for 30 minutes before serving.
