When gooseberries turn a beautiful ruby-red colour, they look absolutely stunning in bakes. This gooseberry custard cake tastes delicious with finely grated lemon zest (or orange zest).<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for gooseberry custard cake:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>100 g butter<\/li>\n<li>100 g caster sugar<\/li>\n<li>2 large eggs<\/li>\n<li>finely grated zest of 1 small lemon<\/li>\n<li>100 g plain flour<\/li>\n<li>30 g sugar-free vanilla custard powder<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>400 g gooseberries, topped and tailed<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature. Sift together the plain flour, custard powder (or potato starch) and baking powder, then set aside.<\/p>\n<p style=\"text-align: justify;\">Place the butter and sugar into the bowl of a stand mixer. Cream together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the lemon zest and mix until combined. Add the sifted dry ingredients and gently fold in with a spatula until just combined.<\/p>\n<p style=\"text-align: justify;\">Line a 21 cm round cake tin with baking paper. Transfer the batter into the prepared tin and level the surface.
