Try their soft version :). These soft almond amaretti have a delicate crisp shell and a soft, slightly chewy centre, reminiscent of classic macarons. They\u2019re sweet, irresistible and impossible to stop at just one. They\u2019re also a perfect way to use up leftover egg whites from other bakes. I store them in a tin and always have a little treat ready to enjoy with coffee ;).<\/em><\/p>\n<\/blockquote>\n<p data-start=\"435\" data-end=\"465\"><span style=\"font-size: 10pt;\">Makes about 35\u201340 cookies.<\/span><\/p>\n<p style=\"text-align: justify;\"><u>Ingredients for the soft amaretti cookies<\/u><\/p>\n<ul>\n<li style=\"text-align: justify;\">3 egg whites, from large eggs (110 g)<\/li>\n<li style=\"text-align: justify;\">280 g ground almonds<\/li>\n<li style=\"text-align: justify;\">250 g caster sugar<\/li>\n<li style=\"text-align: justify;\">\u00bd teaspoon vanilla extract<\/li>\n<li style=\"text-align: justify;\">30 ml Amaretto liquor<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><u>Additionally:<\/u><\/p>\n<ul>\n<li style=\"text-align: justify;\">caster sugar, for rolling<\/li>\n<li style=\"text-align: justify;\">icing sugar, for rolling<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">Whisk the egg whites in the bowl of a mixer until stiff peaks form. Add the remaining ingredients and mix until a thick, sticky almond paste forms.<\/p>\n<p style=\"text-align: justify;\">Line a flat baking tray with baking parchment. Pinch off pieces of dough about the size of a small walnut and roll into balls. Roll each ball first in caster sugar, then in icing sugar, and place on the baking tray, leaving plenty of space between them.<\/p>\n<p style=\"text-align: justify;\">Bake for about 15 minutes at 175\u00b0C. The cookies will rise, crack and turn lightly golden.
