A healthier twist on classic chocolate cookies!<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt;\">Makes about 25 cookies.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for buckwheat chocolate cookies:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: justify;\">60 g butter<\/li>\n<li style=\"text-align: justify;\">125 g dark muscovado sugar<\/li>\n<li style=\"text-align: justify;\">a large pinch of salt<\/li>\n<li style=\"text-align: justify;\">1 teaspoon vanilla extract<\/li>\n<li style=\"text-align: justify;\">2 large eggs<\/li>\n<li style=\"text-align: justify;\">125 g buckwheat flour<\/li>\n<li style=\"text-align: justify;\">\u00bd teaspoon bicarbonate of soda<\/li>\n<li style=\"text-align: justify;\">25 g cocoa powder, sifted<\/li>\n<li style=\"text-align: justify;\">125 g dark chocolate, melted (in a bain-marie or microwave) and slightly cooled<\/li>\n<li style=\"text-align: justify;\">150 g dark chocolate chips or chopped dark chocolate<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">In a mixing bowl, cream the butter and sugar until light brown and fluffy. Add the salt and vanilla extract and mix. Then add the eggs one at a time, mixing until combined. Pour in the cooled melted chocolate and mix thoroughly. Add the buckwheat flour, bicarbonate of soda and cocoa powder, and mix until just combined. Finally, fold in the chocolate chips or chopped chocolate. Chill the dough in the fridge for 15 \u2013 30 minutes.<\/p>\n<p style=\"text-align: justify;\">Line a baking tray with baking paper. Spoon portions of dough onto the tray (about a heaped tablespoon per cookie) and lightly flatten. Bake at 170\u00b0C for 9 \u2013 10 minutes.
