In fact, it\u2019s so light and delicate that it wouldn\u2019t hold its shape well in a classic bundt mould anyway. It tastes absolutely divine \u2014 truly irresistible if you enjoy fresh, zesty lemon flavours. The addition of raspberries is the perfect finishing touch. Highly recommended not just for special occasions!<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for the fluffy lemon cake:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: justify;\">120 g unsalted butter<\/li>\n<li style=\"text-align: justify;\">200 g caster sugar<\/li>\n<li style=\"text-align: justify;\">2 eggs<\/li>\n<li style=\"text-align: justify;\">finely grated zest of 2 lemons<\/li>\n<li style=\"text-align: justify;\">freshly squeezed juice of \u00bd lemon<\/li>\n<li style=\"text-align: justify;\">200 g plain flour<\/li>\n<li style=\"text-align: justify;\">70 g potato starch (or cornflour)<\/li>\n<li style=\"text-align: justify;\">1\u00bd teaspoons baking powder<\/li>\n<li style=\"text-align: justify;\">\u2153 cup sour cream<\/li>\n<li style=\"text-align: justify;\">250 g raspberries (fresh or frozen)<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature. Sift together the plain flour, potato starch and baking powder. Set aside.<\/p>\n<p style=\"text-align: justify;\">In the bowl of a mixer, cream together the butter and sugar until pale and fluffy. Add the eggs one at a time, beating well after each addition until fully incorporated. Mix in the lemon juice and zest. Add the sifted dry ingredients along with the sour cream, and gently fold together using a spatula until just combined \u2014 do not overmix. Carefully fold in the raspberries.<\/p>\n<p style=\"text-align: justify;\">Line the base of a 23 cm springform tin with baking parchment. Spoon the batter into the tin and level the surface.<\/p>\n<p style=\"text-align: justify;\">Bake at 160\u00b0C for about 45 minutes, or until a skewer inserted into the centre comes out clean.<\/p>\n<p style=\"text-align: justify;\">Remove from the oven, allow to cool slightly in the tin, then transfer to a serving plate and drizzle with icing.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for the lemon icing:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>1 cup icing sugar<\/li>\n<li>3 tablespoons lemon juice<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Mix all ingredients in a bowl using the back of a spoon until smooth.
