Absolutely irresistible \u2014 you\u2019ll fall in love with them!<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\">Many thanks to Margareta for this lovely recipe!<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt;\">Makes: 12 tartlets.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for the shortcrust pastry:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: justify;\">125 g plain flour<\/li>\n<li style=\"text-align: justify;\">100 g cold unsalted butter<\/li>\n<li style=\"text-align: justify;\">1 large egg yolk (or 2 small)<\/li>\n<li style=\"text-align: justify;\">50 g icing sugar<\/li>\n<li style=\"text-align: justify;\">a pinch of salt<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Sift the flour into a bowl. Add the cold butter and rub in (or chop with a knife) until the mixture resembles breadcrumbs. Add the egg yolk, icing sugar and salt, then quickly knead into a dough (you can also use a food processor). Shape into a ball, wrap in cling film and chill in the fridge for 1 hour.<\/p>\n<p style=\"text-align: justify;\">Prepare a 12-hole muffin tin by greasing it with butter and lightly dusting with flour. Tap out any excess. Roll out the chilled pastry to a thickness of about 2\u20133 mm. Cut out circles slightly larger than the muffin cavities and line each one carefully with the pastry. Chill again while preparing the filling.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for the almond filling:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>85 g unsalted butter<\/li>\n<li>120 g icing sugar<\/li>\n<li>2 large eggs<\/li>\n<li>120 g ground almonds<\/li>\n<li>1 teaspoon vanilla, almond or lemon extract<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">Cream together the butter and icing sugar until pale and fluffy. Add the eggs one at a time, mixing well after each addition (don\u2019t worry if the mixture looks slightly curdled). Add the ground almonds and extract, and mix until combined. Divide the filling between the pastry cases, filling each no more than \u2154 full (they will rise during baking).<\/p>\n<p style=\"text-align: justify;\">Bake at 200\u00b0C for about 15 minutes, until golden. Remove and allow to cool completely.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for lemon icing:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>1 cup icing sugar<\/li>\n<li>2\u20133 tablespoons lemon juice<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Mix together using the back of a spoon until smooth. The icing should be thick but spreadable.
