An absolute bonus!<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt;\">Makes 12 cupcakes.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for redcurrant cupcakes:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>125 g unsalted butter<\/li>\n<li>\u00bd cup caster sugar<\/li>\n<li>200 g plain flour<\/li>\n<li>1\u00bd teaspoons baking powder<\/li>\n<li>2 large eggs<\/li>\n<li>\u00bc cup sour cream<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>190 g redcurrants, stalks removed<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature. Sift together the flour and baking powder. Set aside.<\/p>\n<p style=\"text-align: justify;\">Cream the butter and sugar until pale and fluffy. Add the eggs one at a time, mixing well after each addition (the mixture may look slightly curdled \u2014 this is fine). Add the vanilla extract and mix. Fold in the flour mixture alternately with the sour cream, mixing gently with a spatula until just combined. Fold in the redcurrants.<\/p>\n<p style=\"text-align: justify;\">Line a muffin tin with paper cases and divide the batter between them, filling each about \u00be full.<\/p>\n<p style=\"text-align: justify;\">Bake at 170\u00b0C for about 25 minutes, or until a skewer inserted into the centre comes out clean. Remove and cool completely on a wire rack.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for redcurrant glaze:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>60 g redcurrants, stalks removed<\/li>\n<li>1 cup icing sugar<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Place the redcurrants in a saucepan with 1 tablespoon of sugar and heat until softened. Pass through a sieve. Measure out 2\u20133 tablespoons of the pur\u00e9e and mix with icing sugar until smooth.
