I love how simple this recipe is. The rhubarb compote tastes delicious and will take you back to your childhood – this is probably what your mum used to make\u2026 It has a beautiful pink colour and a tangy flavour. It tastes particularly good on warm or hot days, served with ice.<\/p>\n<\/blockquote>\n

Ingredients for the rhubarb compote:<\/span><\/p>\n

• 500 g rhubarb<\/li>\n
• 1.3 litres of water<\/li>\n
• 100 g sugar<\/li>\n
• 1 tsp vanilla paste or the seeds of 1 vanilla pod<\/li>\n
• juice of half an orange or mint leaves, optional<\/li>\n<\/ul>\n

  Wash the rhubarb (just the stalks) and cut into 3 cm pieces. Do not peel. Place in a pot with the water, sugar, and vanilla paste. Bring to the boil. Remove from the hob (add the orange juice or mint leaves if you wish), then cool slightly or chill.<\/p>\n
