Calling it \u201cdivine\u201d wouldn\u2019t be enough \u2013 it\u2019s completely irresistible! A wonderfully creamy cheesecake layer, a tangy plum butter and a perfectly spiced gingerbread mousse\u2026 it smells like Christmas. You can confidently save it to your favourites and bake it for the festive table, or \u2013 like me \u2013 make it now and enjoy every bite ahead of the season. It\u2019s truly spectacular and might just outshine all other Christmas cheesecakes\u2026 highly recommended!<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for base:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: justify;\">2 packs of plain biscuits (petit beurre type)<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for cheesecake filling:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>750 g full-fat or semi-fat curd cheese, finely ground<\/li>\n<li>250 ml double cream<\/li>\n<li>2 large eggs<\/li>\n<li>1\u00bd tablespoons potato starch (or cornflour)<\/li>\n<li>1 cup caster sugar<\/li>\n<li>1 teaspoon vanilla paste or extract (or 1 packet vanilla sugar)<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">Place all ingredients into a mixing bowl and mix until just combined (either with a mixer or whisk). Do not overmix \u2013 incorporating too much air will cause the cheesecake to rise and then sink. The goal is a smooth, level surface after baking.<\/p>\n<p style=\"text-align: justify;\">Line a deep baking tin (33 \u00d7 23 cm) with baking paper. Arrange the biscuits in a single layer on the base. Pour over the cheesecake mixture and level the surface.<\/p>\n<p style=\"text-align: justify;\">Bake at 160\u00b0C for about 50 minutes, until set. If needed, extend the baking time slightly. Remove and cool completely.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredinets for filling layer:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>about \u00be jar plum butter<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Spread evenly over the cooled cheesecake.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for gingerbread mousse:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>8 g powdered gelatine + 50 ml cold water<\/li>\n<li>375 g milk chocolate, chopped<\/li>\n<li>825 ml double cream, chilled<\/li>\n<li>1\u00bd tablespoons Baileys liqueur<\/li>\n<li>6 teaspoons mixed spice<\/li>\n<li>\u00bd teaspoon ground ginger<\/li>\n<li>\u00bd teaspoon ground cinnamon<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Place the chopped chocolate in a bowl. Soak the gelatine in cold water for 10 minutes.<\/p>\n<p style=\"text-align: justify;\">Heat 275 ml cream until almost boiling. Remove from heat, add the gelatine and stir until dissolved. Pour over the chocolate and stir until smooth. Add the liqueur, 4 teaspoons of spice mix (adjust later), cinnamon and ginger. Leave to cool to room temperature.<\/p>\n<p style=\"text-align: justify;\">Whip the remaining 550 ml cream until stiff. Fold one-third of the whipped cream into the chocolate mixture gently, then fold in the rest, being careful not to deflate the mixture. Taste and adjust spices if needed.<\/p>\n<p style=\"text-align: justify;\">Spread the mousse over the cheesecake and smooth the top. Chill in the fridge for several hours.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Decoration:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>250 ml double cream, whipped<\/li>\n<li>2 &#8211; 3 gingerbread cookies, crushed<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Pipe whipped cream onto each portion and sprinkle with crushed gingerbread.
