This autumn pumpkin bundt cake is incredibly moist, not too sweet, and perfectly spiced. A truly autumnal bake made with pumpkin pur\u00e9e (homemade or shop-bought). It\u2019s also very simple to prepare – just mix the wet and dry ingredients together. Delicious with a glass of milk – you\u2019ll want slice after slice\u2026 Chocolate and pumpkin are a fantastic pairing!<\/em><\/p>\n<\/blockquote>\n

Ingredients for the pumpkin and chocolate cake:<\/u><\/p>\n

• 415 g plain\u00a0flour<\/li>\n
• 150 g caster sugar<\/li>\n
• 200 g light brown sugar<\/li>\n
• 2\u00be tsp baking powder<\/li>\n
• 1 tsp bicarbonate of soda<\/li>\n
• 1 tsp ground cinnamon<\/li>\n
• 1 tsp ground ginger<\/li>\n
• 500 ml pumpkin puree<\/li>\n
• 250 ml (1 cup)\u00a0buttermilk or kefir<\/li>\n
• 2 large eggs<\/li>\n
• 60 ml\u00a0sunflower or rapeseed oil<\/li>\n
• 60 g cocoa powder<\/li>\n<\/ul>\n

  All ingredients should be at room temperature.<\/p>\n

  In a large bowl, combine the pumpkin pur\u00e9e, \u00be cup buttermilk, sugars, eggs, and oil. Mix until smooth. Sift the plain flour, baking powder, bicarbonate of soda, cinnamon, and ginger into the mixture, then gently fold with a spatula until just combined. Divide the batter in half. Add the cocoa powder and the remaining \u00bc cup buttermilk to one portion and mix until combined.<\/p>\n

  Grease a 3 L bundt tin and dust with flour. Dollop alternating large spoonfuls of pumpkin and chocolate batter into the tin. Use a skewer to gently swirl the batters together.<\/p>\n

  Bake at 170\u00b0C for about 60-75 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool.<\/p>\n
