A wonderfully moist orange cake with cranberries and pistachios \u2013 a bit like a cranberry loaf cake. Fragrant with orange zest and finished with a simple orange icing. It\u2019s incredibly quick to make \u2013 just like muffins, you simply mix everything together. It keeps fresh for days and tastes so good it\u2019s hard to stop at one slice\u2026 I may have eaten most of it myself \u2013 and I\u2019m not even sorry ;). You can also use this recipe to make muffins.<\/em><\/p>\n<\/blockquote>\n

Ingredients for cranberry orange cake with pistachios:<\/span><\/p>\n

• 250 g plain flour<\/li>\n
• 1 teaspoon baking powder<\/li>\n
• \u00bd teaspoon bicarbonate of soda<\/li>\n
• 1 large egg<\/li>\n
• 160 g caster sugar<\/li>\n
• 240 ml kefir or buttermilk<\/li>\n
• 80 ml sunflower or rapeseed oil<\/li>\n
• 1 teaspoon vanilla extract<\/li>\n
• finely grated zest of 1 orange<\/li>\n
• 110 g cranberries (fresh or frozen), roughly chopped<\/li>\n
• 65 g unsalted pistachios, roughly chopped<\/li>\n<\/ul>\n

  All ingredients should be at room temperature.<\/p>\n

  In a bowl, whisk together the egg, sugar, kefir (or buttermilk), oil, vanilla and orange zest until combined. Sift in the flour, baking powder and bicarbonate of soda. Mix gently with a whisk until just combined \u2013 do not overmix. Fold in the cranberries and pistachios.<\/p>\n

  Grease and flour a small loaf tin (21 \u00d7 11 cm), tapping out any excess flour. Transfer the batter into the tin and level the surface.<\/p>\n

  Bake at 160 – 170\u00b0C for about 60 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven, cool in the tin, then turn out onto a serving plate.<\/p>\n

  Ingredinets for orange icing:<\/span><\/p>\n

  • \u00bd cup icing sugar<\/li>\n
  • 1\u00bd\u20132 tablespoons boiling water<\/li>\n
  • finely grated zest of 1 orange<\/li>\n<\/ul>\n

    Mix all ingredients until smooth, starting with less water. Adjust the consistency by adding more icing sugar (if too thin) or a little more water (if too thick). Drizzle the icing over the cooled cake.<\/p>\n
