Fresh spinach should be blended into a thick paste.<\/p>\n<p style=\"text-align: justify;\">Whisk eggs and sugar until pale and fluffy (tripled in volume). Slowly drizzle in oil while mixing. Add spinach paste and lemon zest, mix briefly. Sift in flour and baking powder, then fold gently until just combined.<\/p>\n<p style=\"text-align: justify;\">Fill muffin cases to the top and bake at 170\u00b0C for about 25 minutes, or until a skewer comes out clean. Cool completely, then cut off the tops and crumble them for decoration.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for lemon cream:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>250 ml double cream<\/li>\n<li>250 g mascarpone<\/li>\n<li>2 tablespoons icing sugar<\/li>\n<li>1 teaspoon lemon extract or a few drops lemon flavouring<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be chilled. Whip everything together until thick and creamy.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Additionally:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>fresh berries (blueberries, pomegranate seeds) for decoration<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong>Assembly:<\/strong><\/p>\n<p style=\"text-align: justify;\">Pipe or spread the lemon cream onto each cupcake. Sprinkle with the reserved green crumbs to create the \u201cmoss\u201d effect.
