Add the lemon juice and zest, whisking until slightly thickened. Gently fold in the raspberries. Pour the mixture over the cooled base.<\/p>\n<p style=\"text-align: justify;\">Bake at 180\u00b0C for 15 &#8211; 17 minutes, until the filling is set (it should feel firm and slightly springy, especially in the centre).
