These cr\u00e8me br\u00fbl\u00e9e mini cheesecakes are quick and easy to make, although you\u2019ll need a kitchen blowtorch to create the signature caramel topping. The cheesecakes can be stored in the fridge for up to 3 days, but the sugar should be caramelised just before serving. Delicious served with fresh strawberries.<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\">Makes 12 mini cheesecakes.<\/p>\n<p style=\"text-align: justify;\"><u>Ingredients for the mini cheesecakes:<\/u><\/p>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: justify;\">10 round biscuits<\/li>\n<li style=\"text-align: justify;\">500 g full-fat or semi-fat curd cheese, ground three times<\/li>\n<li style=\"text-align: justify;\">250 g mascarpone cheese<\/li>\n<li style=\"text-align: justify;\">2 large yolks<\/li>\n<li style=\"text-align: justify;\">2\/3 cup caster sugar (or slightly less, to taste)<\/li>\n<li style=\"text-align: justify;\">1 \u00d7 40 g packet vanilla pudding powder (unsweetened)<\/li>\n<li style=\"text-align: justify;\">1 tsp\u00a0vanilla extract or vanilla paste<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">Line a muffin tin with paper cupcake cases. Place one biscuit in the base of each case &#8211; if it\u2019s too large, break or trim it to fit.<\/p>\n<p style=\"text-align: justify;\">Place the curd cheese, mascarpone, egg yolks, sugar, vanilla pudding powder and vanilla extract in a mixing bowl and blend until smooth. Avoid overmixing, as you don\u2019t want to incorporate too much air into the mixture.<\/p>\n<p style=\"text-align: justify;\">Divide the cheesecake mixture evenly between the cases. Bake at 160\u00b0C for 28 &#8211; 30 minutes. Remove from the oven and leave to cool completely at room temperature for several hours.<\/p>\n<p style=\"text-align: justify;\"><u>Ingredients for the caramelised sugar topping:<\/u><\/p>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: justify;\">12 heaped\u00a0tsp caster sugar<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">You will need a kitchen blowtorch to create the caramelised sugar crust.<\/p>\n<p style=\"text-align: justify;\">Just before serving, gently pat the tops of the cheesecakes dry with kitchen paper if needed, then sprinkle evenly with caster sugar. Carefully remove the paper cases so they don\u2019t burn. Caramelise the sugar using a blowtorch until golden and crisp. Alternatively, place briefly under a hot grill for a few seconds, watching closely to prevent burning.
