This time, instead of the classic version, they\u2019re topped with a buttery crumble \u2013 though you can simply drizzle them with icing if you prefer. Give them a try :).<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt;\">Makes 13 buns.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for blueberry filling:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>400 g blueberries<\/li>\n<li>3 tablespoons sugar<\/li>\n<li>1 tablespoon cornflour<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Mix all ingredients together.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for yeast dough:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>500 g strong white bread flour<\/li>\n<li>30 g fresh yeast or 14 g dried yeast<\/li>\n<li>200 ml milk<\/li>\n<li>6 egg yolks (from large eggs)<\/li>\n<li>100 g butter<\/li>\n<li>90 g sugar<\/li>\n<li>8 g vanillin sugar or 1 teaspoon vanilla paste<\/li>\n<li>a pinch of salt<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Mix the flour with the dried yeast (if using fresh yeast, prepare a starter first). Add the remaining ingredients and knead, adding the melted butter towards the end. Knead until the dough is soft and elastic. Place in a lightly floured bowl, cover with a tea towel and leave in a warm place to rise until doubled in size (about 1\u00bd hours).<\/p>\n<p style=\"text-align: justify;\">Knead briefly again, then divide into 13 portions (about 80 g each). Shape into balls, then flatten each into a disc. Place a heaped spoonful of blueberry filling in the centre. Seal the buns carefully, making sure there\u2019s no flour in the seam (otherwise they may open during baking). Place seam-side down and shape into neat rounds. Arrange on a lined baking tray, cover and leave to rise again for about 45 minutes or until doubled in size. Brush with beaten egg and sprinkle with crumble topping.<\/p>\n<p style=\"text-align: justify;\">Bake at 170\u00b0C for about 25 minutes. Remove and cool on a wire rack. Dust with icing sugar.<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Additionally:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>1 egg beaten with 1 tablespoon milk (for brushing)<\/li>\n<li>icing sugar, for dusting<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">Ingredients for crumble topping:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li>50 g butter, melted<\/li>\n<li>100 g plain flour<\/li>\n<li>50 g sugar<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Rub together with your fingertips until crumbly.<\/p>\n<p style=\"text-align: justify;\"><strong>Method for bread machine users:<\/strong><\/p>\n<p style=\"text-align: justify;\">Place all the yeast dough ingredients into the bread machine in the following order: liquid ingredients first, then dry ingredients, and finally the yeast. Select the \u2018dough\u2019 programme (kneading and first rise).
