Their flavour is reminiscent of Japanese cheesecake, but they\u2019re much quicker to make ;). Light and airy, they\u2019re like little cheese clouds. I served mine with sour cream and fruit sauce. They\u2019re so addictive &#8211; I highly recommend giving this recipe a try!<\/em><\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\">Makes 15.<\/p>\n<p style=\"text-align: justify;\"><u>Ingredients for the curd cheese pancakes:<\/u><\/p>\n<ul style=\"text-align: justify;\">\n<li>3 large eggs, separated<\/li>\n<li>2 Tbsp caster sugar<\/li>\n<li>225 g semi-fat or full-fat curd cheese (or cottage cheese)<\/li>\n<li>50 g plain flour<\/li>\n<li>1 tsp vanilla extract<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">Mash the curd cheese (or cottage cheese) with a fork until smooth.<\/p>\n<p style=\"text-align: justify;\">In a mixing bowl, beat the egg yolks with the sugar until pale and fluffy. Add the curd cheese, plain flour and vanilla extract, and mix until well combined. In a separate bowl, whisk the egg whites until stiff peaks form, then gently fold them into the batter.<\/p>\n<p style=\"text-align: justify;\">Heat a small amount of oil in a frying pan over medium heat. Spoon about 1 tablespoon of batter per pancake into the pan and cook until golden brown on one side, then flip and cook until golden on the other side.<\/p>\n<p style=\"text-align: justify;\">Serve with fruit sauce and sour cream.<\/p>\n<p style=\"text-align: justify;\"><u>Ingredients for the r<\/u><u>aspberry sauce:<\/u><\/p>\n<ul style=\"text-align: justify;\">\n<li>250 g raspberries<\/li>\n<li>2 Tbsp sugar<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">In a small saucepan, combine the raspberries and sugar. Heat gently, stirring occasionally, until the sugar dissolves and the fruit softens slightly.
