A light icing and a glass of milk on the side make them even more irresistible.<\/em><\/p>\n<\/blockquote>\n<p>Makes 30 cookies.<\/p>\n<p style=\"text-align: justify;\"><u>Ingredients for the soft pumpkin cookies:<\/u><\/p>\n<ul>\n<li style=\"text-align: justify;\">115 g butter<\/li>\n<li style=\"text-align: justify;\">150 g caster sugar<\/li>\n<li style=\"text-align: justify;\">1 large egg<\/li>\n<li style=\"text-align: justify;\">1 tsp\u00a0vanilla extract<\/li>\n<li style=\"text-align: justify;\">1 cup pumpkin pur\u00e9e<\/li>\n<li style=\"text-align: justify;\">2 cups plain\u00a0flour<\/li>\n<li style=\"text-align: justify;\">2 tsp\u00a0baking powder<\/li>\n<li style=\"text-align: justify;\">3 tsp ground cinnamon<\/li>\n<li style=\"text-align: justify;\">1 tsp mixed spice<\/li>\n<li style=\"text-align: justify;\">\u00bd tsp ground nutmeg<\/li>\n<li style=\"text-align: justify;\">\u00bd tsp ground ginger<\/li>\n<li style=\"text-align: justify;\">\u00bd tsp ground cloves<\/li>\n<li style=\"text-align: justify;\">a pinch of salt<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">All ingredients should be at room temperature.<\/p>\n<p style=\"text-align: justify;\">In a large mixing bowl, beat the butter and sugar together until pale and fluffy. Beat in the vanilla extract and the egg. Add the pumpkin pur\u00e9e and mix until combined. Sift in the dry ingredients \u2014 flour, baking powder, spices and salt \u2014 then fold gently until just combined. Avoid overmixing.<\/p>\n<p style=\"text-align: justify;\">Line a baking tray with baking paper. Using a tablespoon, drop spoonfuls of dough onto the tray, leaving 3 &#8211; 4 cm between each one. Lightly dampen the back of a spoon or your hand with water and gently flatten the cookies slightly.<\/p>\n<p style=\"text-align: justify;\">Bake at 180\u00b0C\u00a0for about 10 minutes, or until the cookies have risen and are lightly golden underneath. Transfer to a wire rack and leave to cool completely.<\/p>\n<p style=\"text-align: justify;\">Ice the cookies, then finish with a light sprinkle of cinnamon.<\/p>\n<p style=\"text-align: justify;\"><u>Ingredients for the icing:<\/u><\/p>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: justify;\">1 cup icing sugar<\/li>\n<li style=\"text-align: justify;\">2 &#8211; 3 Tbsp hot water<\/li>\n<li style=\"text-align: justify;\">cinnamon, for sprinkling<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Using the back of a spoon, mix until smooth.
