Excellent Polish pancakes (racuchy) made with yoghurt. Probably the fastest dessert in the world! You don\u2019t even need a mixer. They\u2019re even more delicious sprinkled with icing sugar. Makes 2 plates.<\/p>\n

Ingredients for the racuchy:<\/u><\/p>\n

• 250 g Greek or natural yoghurt<\/li>\n
• 3 large eggs<\/li>\n
• 200 g plain flour<\/li>\n
• 1 tsp baking soda<\/li>\n<\/ul>\n

  Additionally:<\/u><\/p>\n

  \n
  • rapeseed oil for frying<\/li>\n
  • icing sugar, for dusting<\/li>\n<\/ul>\n

    Place the yoghurt and eggs in a bowl and whisk until combined. Sift the plain flour and baking soda directly into the bowl and whisk until smooth. The batter should be relatively thick – if necessary, add another tablespoon of yoghurt.<\/p>\n

    Heat a little oil in a non-stick frying pan. Spoon portions of the batter into the pan and fry on both sides until golden brown. Repeat with the remaining batter, adding more oil as needed. Transfer to kitchen paper to absorb any excess oil. Dust with icing sugar and serve.<\/p>\n
