Makes 20 crepes.<\/p>\n
Ingredients for the chocolate crepes:<\/u><\/p>\n
\n
- 80 g dark chocolate (minimum 60% cocoa)<\/li>\n
- 1 Tbsp cocoa powder<\/li>\n
- 500 ml milk<\/li>\n
- 1 (to 1 and 1\/4) cup plain flour<\/li>\n
- 3 large eggs<\/li>\n
- 3 Tbsp icing sugar<\/li>\n
- 2 Tbsp butter, melted<\/li>\n
- 3 Tbsp dark rum<\/li>\n
- pinch of salt<\/li>\n<\/ul>\n
Gently heat the milk in a saucepan. Add the chocolate and stir until melted and smooth. Set aside to cool slightly. Add the remaining ingredients and blend until you have a smooth batter. Leave to rest for 30\u201360 minutes.<\/p>\n
Heat a non-stick frying pan over a medium heat and lightly brush with oil. Pour in a small amount of batter, swirling the pan to coat the base evenly. Cook on both sides until just set \u2014 avoid overcooking, as softer cr\u00eapes have the best texture. Repeat with the remaining batter, lightly oiling the pan between each cr\u00eape.<\/p>\n
