The best pumpkin and apple racuchy – Polish-style yeast pancakes! The addition of yeast makes them wonderfully thick and fluffy. No eggs are needed in this recipe, as the pumpkin purée gives the batter a lovely texture and flavour on its own.
Delicate curd cheese pancakes made wonderfully fluffy thanks to beaten egg whites. Their flavour is reminiscent of Japanese cheesecake, but they’re much quicker to make ;). Light and airy, they’re like little cheese clouds. I served mine with sour cream and fruit sauce.
