
Waffles — but make them luxurious! This elegant waffle “cake” is a fun and unusual way to serve a classic favourite. Whether it turns out more like a cake or a gateau depends on the size of your waffle maker. I used a smaller one to create a more delicate, refined look. It slices surprisingly well, though I personally love serving it so each person gets a single “layer” as their own portion. One thing is certain — however you serve waffles, they always impress and taste wonderful.
Ingredients for the waffles:
- use your favourite waffle recipe (prepare half a batch, depending on the size of your waffle maker).
Bake the waffles and allow them to cool completely on a wire rack.
Ingredients for the cream:
- 350 ml double cream (chilled)
- 2 tablespoons mascarpone (chilled)
- 1 tablespoon icing sugar
Whip all ingredients together until thick and smooth.
To assemble:
- fresh fruit: strawberries, raspberries, pomegranate seeds, blueberries
Place one waffle on a serving plate. Spread with whipped cream and top with fresh fruit. Repeat to create layers (about 3 layers works well). Dust with icing sugar and serve immediately.
