Skyr Doughnut Bites

Quick, simple and lightly vanilla-flavoured skyr doughnut bites made with natural, thick Icelandic-style yoghurt. They are delicate and soft, and take just moments to prepare – literally no longer than it takes to heat the oil for frying. Could it be any easier? A speedy carnival treat made with skyr!

Ingredients for 2 plates of doughnut bites.

Ingredients for the skyr doughnut bites:

  • 200 g skyr
  • 2 large eggs
  • 2 tbsp caster sugar
  • 200 g plain flour
  • 1½ tsp baking powder
  • 1 tsp vanilla extract
  • a pinch of salt

All the ingredients should be at room temperature.

Mix the skyr with the eggs and sugar (you can whisk them together). Add the sifted plain flour, baking powder, vanilla extract and salt. Mix thoroughly with a fork or whisk until the batter is smooth and free of lumps.

In a wide, shallow saucepan, heat the oil to 175°C (there should be enough oil for the doughnut bites to float freely). Using a spoon, place small portions of batter (about ⅓ of a tablespoon each) into the hot oil, dipping the spoon into the oil from time to time to prevent the batter from sticking. Fry in deep fat until golden brown on both sides – some of the doughnut bites will turn over on their own!

Transfer the fried doughnut bites onto kitchen paper to drain. Before serving, dust generously with icing sugar.

To finish:

  • icing sugar, for dusting
  • rapeseed oil, for frying
