Easy plum cake is a super delicious cake, especially in the autumn season. It is a sweet cake with plums sprinkled with cinnamon sugar. Just warm the ingredients to room temperature and follow the recipe to enjoy a delicious homemade cake.
Ingredients for the easy plum cake:
- 115 g butter
- 160 g caster sugar
- 2 large eggs
- 1 Tbsp lemon juice
- fresh zest from half a lemon
- 190 g plain flour
- 1 tsp baking powder
- 450 g plums, halved and pitted
Ingredients for the cinnamon sugar:
- 1.5 Tbsp sugar
- 1/4 tsp ground cinnamon
All ingredients should be at room temperature.
Mix all the ingredients for the cinnamon sugar and put aside.
In the bowl of the mixer, beat the butter with the sugar until light and fluffy. Add the eggs, one by one, beating until the ingredients are entirely combined after each addition. Add zest and lemon juice and mix. Sift the plain flour and baking powder directly over the well-beaten ingredients and mix gently with a spatula until the ingredients are combined.
Line the bottom of a 23 cm diameter cake tin with baking paper. Place the batter into the tin and smooth out. Place the plums on top with the cut side up so they are next to each other. Sprinkle evenly with the cinnamon sugar.
Bake at 160 – 170°C for 50 minutes or until a stick inserted into the cake comes out dry. Take it out of the oven, cool and place it on a cake stand.
