Easy plum cake

Easy plum cake is a wonderfully delicious bake, especially during the autumn season. A sweet, buttery cake topped with plums and sprinkled with cinnamon sugar. Simply bring the ingredients to room temperature and follow the recipe to enjoy a delicious homemade treat.

Ingredients for the easy plum cake:

  • 115 g butter
  • 160 g caster sugar
  • 2 large eggs
  • 1 Tbsp lemon juice
  • zest of ½ lemon
  • 190 g plain flour
  • 1 tsp baking powder
  • 450 g plums, halved and stoned

Ingredients for the cinnamon sugar:

  • 1½ Tbsp sugar
  • ¼ tsp ground cinnamon

All ingredients should be at room temperature.

Mix the ingredients for the cinnamon sugar and set aside.

In the bowl of a mixer, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition until fully combined. Add the lemon zest and lemon juice and mix. Sift the plain flour and baking powder directly into the mixture and fold gently with a spatula until just combined.

Line the base of a 23 cm round cake tin with baking paper. Spoon the batter into the tin and smooth the surface. Arrange the plums on top, cut-side up, close together. Sprinkle evenly with the cinnamon sugar.

Bake at 160 – 170°C for about 50 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven, leave to cool, then transfer to a cake stand.
