Zucchini bread

Homemade zucchini bread is an easy, moist and absolutely delicious bake. It is flavoured with cinnamon, nutmeg, chopped nuts and dried cranberries – so yummy!

Yield: 2 loaves

Ingredients for the zucchini bread:

  • 2 eggs
  • 1⅓ cups caster sugar
  • 2 tsp vanilla extract
  • 3 cups freshly grated zucchini (about 500 g)
  • 150 g butter, melted
  • 2 tsp bicarbonate of soda
  • a pinch of salt
  • 3 cups plain flour
  • ½ tsp ground nutmeg
  • 2 tsp ground cinnamon
  • 1 cup chopped pecans or walnuts
  • 1 cup dried cranberries (or raisins)
  • 4 Tbsp milk (optional)

All ingredients should be at room temperature.

Mix the sugar with the eggs and vanilla extract. Add the grated zucchini, melted butter and bicarbonate of soda, then mix well. Sift the flour and spices directly into the mixture and fold in with a spatula (you can add four tablespoons of milk if needed). Add the nuts and dried fruit and mix gently.

Divide the batter between two loaf tins (10 × 20 cm each) lined with baking paper.

Bake at 175°C for 45 – 60 minutes, or longer if needed, until a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool on a wire rack.
