Homemade zucchini bread is an easy, moist and absolutely delicious bread. It is flavoured with cinnamon, nutmeg, chopped nuts, and dried cranberries. So yummy!
Yield: 2 loaves
Ingredients for zucchini bread:
- 2 eggs
- 1 and 1/3 cup caster sugar
- 2 tsp vanilla extract
- 3 cups freshly grated zucchini (about 500 g)
- 150 g butter, melted
- 2 tsp bicarbonate of soda
- a pinch of salt
- 3 cups plain flour
- .½ tsp ground nutmeg
- 2 tsp ground cinnamon
- 1 cup chopped pecans or walnuts
- 1 cup dried cranberries (or raisins)
- 4 Tbsp milk (not necessarily)
All ingredients should be at room temperature.
Mix the sugar with eggs and vanilla extract. Add grated zucchini, melted butter, bicarbonate soda and mix. Directly into the mixture, sift the flour and spices and mix with a spatula (you can add four tablespoons of milk if you wish). Add the fruit and mix.
Divide the batter between two baking tins (10 x 20 cm each), previously lined with baking paper.
Bake at 175°C for 45 – 60 minutes or longer, until a stick inserted into the cake comes out dry. Remove and cool on a cooling rack.
