
A French apple cake, the recipe itself comes from France. Delicate, moist and absolutely delicious, with a hint of rum and generous chunks of apple. Simply irresistible! Although it’s a simple cake made with basic ingredients, it has a certain French elegance about it ;). It keeps beautifully for several days, making it one of those cakes that stays fresh for longer.
Ingredients for the French apple cake:
- ¾ cup plain flour
- ¾ teaspoon baking powder
- a pinch of salt
- 4 large apples
- 2 large eggs
- ⅔ cup caster sugar
- 3 tablespoons dark rum
- ½ teaspoon vanilla extract
- 115 g butter, melted and cooled
All the ingredients should be at room temperature. Sift together the flour, salt and baking powder and set aside.
Peel the apples (choose firm, tart apples), remove the cores and cut into large 2–2.5 cm cubes.
Place the eggs and sugar in the bowl of a mixer. Whisk briefly, just until combined, then beat for literally a moment until you have a smooth, uniform mixture (a smooth emulsion) with a little foam – do not beat until light and fluffy! Add the rum and vanilla and mix briefly. Add the melted, cooled butter, followed by the sifted dry ingredients, and mix with a spatula or whisk until just combined. Fold in the apple pieces, making sure they are well coated in the batter.
Transfer the batter to a 23 cm springform tin lined with baking paper.
Bake at 175°C for about 45–50 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool, or serve warm with whipped cream or ice cream.
