Apple and cranberry porridge

Healthy breakfast recipe – porridge with apples, cranberries, and cinnamon. Ridiculously easy to prepare and packed with vitamins and fibre. Add some chopped walnuts for extra crunch!

Serves 4.

Ingredients for the porridge:

  • 1½ cups rolled oats
  • 1 cup milk
  • 1¾ cups water
  • ½ cup single cream
  • 2 Tbsp sugar
  • a pinch of salt

Place all the ingredients in a saucepan and bring to a boil. Reduce the heat to low and simmer for about 5 minutes, or until the porridge thickens, stirring frequently. If necessary, cook for longer or add a little more water, depending on your preferred consistency.

Transfer to a bowl and serve topped with apples and cranberries.

Additionally:

  • 4 small apples
  • 2 Tbsp butter
  • 3 Tbsp sugar
  • a large pinch of cinnamon
  • 1½ tbsp dried cranberries

Peel and slice the apples.

Melt the butter in a frying pan. Add the apples and cook for about 5 minutes, or until softened. Add the sugar and cinnamon and cook for a further 2 minutes. Stir in the dried cranberries.
