Skyr pancakes with apples

Skyr pancakes with apples are a fantastic idea for a weekend breakfast – quick, healthy and budget-friendly ;). Perfect for skyr fans, but not only! They come together in just minutes and turn out exactly how you like them: fluffy, high in protein and light. Cook them on a non-stick pan without oil or with just a minimal amount of fat. Highly recommended!

Makes about 20 pancakes.

Ingredients for skyr pancakes with apples:

  • 300 g skyr
  • 3 large eggs
  • 140 g plain cake flour
  • 1 tsp bicarbonate of soda
  • 2 apples

Peel the apples, remove the cores and slice thinly.

Place the skyr and eggs in a bowl. Whisk until smooth and well combined. Sift the flour (start with 130 g and add the remaining 10 g if needed) and bicarbonate of soda directly into the mixture. Whisk until fully incorporated. Add the sliced apples and stir gently to combine.

Cook the pancakes over medium heat using a minimal amount of oil or none at all (on a non-stick pan). Spoon a heaped tablespoon of batter per pancake and cook until bubbles appear on the surface, then quickly but carefully flip and cook until golden on the other side. Dust the warm pancakes with icing sugar and serve.
