Blueberry drinking jelly

Kisiel is a yummy and quick dessert, very popular in Poland, where I grew up. It is usually made with a fruit compote thickened with potato starch. Kisiel (soft drinking jelly) made at home is relatively easy; it only mixes all the ingredients. And the outcome? A mug of warm homemade blueberry kisiel… but it is also perfect when served cold.

Ingredients for 1 cup:

  • ½ cup blueberries
  • ½ cup water
  • 2 tsp sugar
  • 1 tsp potato starch
  • a few drops of freshly squeezed lemon juice

Mix blueberries with sugar, lemon juice, and almost all water (leave a bit for later). Boil.

Combine potato flour with the water left. Pour into blueberries and stir quickly, avoiding lumps. Boil and simmer for a few seconds.
