waffles

The best waffles I have ever eaten. Michel Roux’s waffle recipe makes wonderfully crisp waffles on the outside and light as a cloud on the inside. They are absolutely delicious — quite possibly the only waffle recipe you’ll ever need!

Ingredients for the waffles:

  • 160 g plain flour
  • 15 g caster sugar
  • a pinch of salt
  • 50 g butter, melted
  • 2 large eggs, separated
  • 270 ml milk
  • a few drops of vanilla or orange extract, or a little lemon zest

Combine the flour, sugar, salt, melted butter, egg yolks and about one-third of the milk. Whisk until smooth, then gradually add the remaining milk and whisk again. Stir in the vanilla and set aside.

In another bowl, whisk the egg whites until stiff peaks form. Gently fold them into the batter. Pour the batter into a waffle maker and cook for about 3 – 4 minutes, or until golden and crisp.

Serve immediately with your favourite toppings.
