The best waffles I have ever eaten. Michel Roux’s waffle recipe makes the best waffles that are crisp on the outside & fluffy like a cloud in the middle. They are delicious; it’s basically the only waffle recipe you’ll ever need!
Ingredients for the waffles:
- 160 g plain flour
- 15 g caster sugar
- a pinch of salt
- 50 g butter, melted
- 2 large eggs, yolks and egg whites separately
- 270 ml milk
- a few drops of vanilla or orange extract or a bit of lemon zest
Combine the flour, sugar, salt, melted butter, egg yolks and about a third of the milk. Whisk until smooth; add in the remaining milk gradually and whisk again. Stir in the vanilla and set aside.
In another bowl, whisk together the egg whites until stiff peaks form. Delicately fold the whites into the batter. Pour the batter into the waffle maker and bake for about 3-4 minutes until golden and crispy.
Serve immediately with your choice of topping.
