
Golden cinnamon cookies are perfect for this time of year and full of flavour. Named after their main ingredient — golden syrup — they have a delicious caramel and cinnamon taste… perfect autumn cookies.
Yield: 30 cookies.
Ingredients for the golden cinnamon cookies:
- 60 g butter
- 115 g golden syrup
- 2 Tbsp brown sugar
- 1 Tbsp caster sugar or icing sugar
- 185 g plain flour
- ½ tsp baking powder
- ½ tsp bicarbonate of soda
- 3 tsp ground cinnamon
Combine the butter, golden syrup and sugars in a medium saucepan. Stir over low heat until the butter has melted, then leave to cool for 5 minutes. Stir in the flour and cinnamon to form a soft dough.
Roll rounded teaspoons of the mixture into balls and place them about 2 cm apart on baking trays lined with baking paper. Gently flatten with a floured fork until about 1 cm thick.
Bake at 220°C for about 10 – 12 minutes, or until golden brown. Leave the cookies on the tray for a few minutes before transferring them to a wire rack to cool.
