
The perfect gingerbread. Soft, deeply aromatic and deliciously sticky. My kids said it’s the best one they’ve ever had :). If you love soft gingerbread that’s simple and quick to make, be sure to save this recipe today!
Ingredients for the sticky gingerbread:
- 150 g butter
- 200 g golden syrup or honey
- 200 g black treacle or molasses
- 90 g dark muscovado sugar
- 2 tsp finely grated fresh ginger
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1 tsp bicarbonate of soda + 2 Tbsp warm water
- 250 ml milk
- 2 large eggs
- 300 g plain flour
All ingredients (except the water) should be at room temperature.
Place the butter, golden syrup, molasses, muscovado sugar and spices in a saucepan. Heat over low heat, stirring, until the sugar has completely dissolved. Leave to cool slightly, but keep the mixture warm. Add the milk, eggs and the bicarbonate of soda dissolved in water, then mix until combined. Sift the plain flour directly into the mixture and whisk gently until just combined — do not overmix.
Line a 20 × 30 cm baking tin with baking paper. Pour the batter into the prepared tin.
Bake at 170°C for about 45 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven, leave to cool, then cut into squares.
