Sticky gingerbread

Perfect gingerbread: soft, delicious and sticky. My children said it’s the best gingerbread they have ever had :). If you like soft gingerbread, which is quick and easy to make, save this recipe today!

Ingredients for the sticky gingerbread:

  • 150 g butter
  • 200 g golden syrup or honey
  • 200 g black treacle or molasses
  • 90 g dark muscovado sugar
  • 2 tsp finely grated fresh ginger
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp bicarbonate of soda + 2 Tbsp warm water
  • 250 ml milk
  • 2 large eggs
  • 300 g plain flour

All ingredients (except water) should be at room temperature.

Place the butter, golden syrup, molasses, muscovado sugar, and spices in a saucepan. Heat at low power of the hob whilst stirring until the sugar is completely dissolved. Cool slightly, but the mixture should remain warm. Add milk, eggs, and bicarbonate of soda dissolved in water and mix until the ingredients are combined. Sift plain flour directly into the mixture and mix with a whisk only until the ingredients are combined, not longer.

Line a cake mould (20 x 30 cm in diameter) with baking paper. Transfer the batter into it.

Bake at 170ºC for about 45 minutes or longer, until a stick inserted into the gingerbread comes out dry. Take it out of the oven, cool it, and cut it into squares.
