
Kissel (kisiel) is a quick and comforting dessert, very popular in Poland, where I grew up. It is usually made from fruit compote thickened with potato starch. Homemade kisiel — a soft, drinkable fruit jelly — is very easy to prepare; you simply mix the ingredients together. And the result? A mug of warm homemade bilberry kissel… though it’s just as delicious served cold.
Ingredients (1 serving):
- ½ cup blueberries
- ½ cup water
- 2 tsp sugar
- 1 tsp potato starch
- a few drops of freshly squeezed lemon juice
Combine the bilberries with the sugar, lemon juice and most of the water (reserve a little for later) in a small saucepan and bring to the boil.
Mix the potato starch with the remaining water until smooth. Pour it into the bilberries, stirring quickly to avoid lumps. Bring back to the boil and simmer for a few seconds until thickened.
